"With only 1 1/2 Carbohydrates, this recipe fits my plan and is simple enough to make anytime."
1 pound extra-lean ground beef or soy meat
1 medium onion, chopped (1/2 cup)
1 small green bell pepper, chopped (1/2 cup)
1 jar (14 ounches) pepperoni-flavored or regular pizza sauce
1/2 cup sliced ripe olives
6 whole wheat sandwich buns, split
1 cup shredded pizza chesse blend (4 ouches)
1. Cook beef, onion and bell pepper in 10-inch skillet over medium heat 6 to 10 mintues, stirring
2. Occasionally, until beef is brown; drain. Stir in pizza sauce and olives. Heat to boiling, stirring occasionally.
3. Spoon about 1/2 cup beef mixture on bottom half of each bun. Immediately sprinkle each with 2 tablespoons of the cheese; add tops of bun. serve immediately or let stand about two minutes until cheese is melted.
